Easy Lemon Greek Potatoes
Yiayia's Greek potatoes could never! (Don't tell her I said that) Give these easy lemon Greek potatoes a try at your next family dinner.
Ingredients
- 6 whole6 whole6 whole Russet Potatoes, (wedged and peeled)
- 1 Tbsp1 Tbsp1 Tbsp Salt and Pepper, (to taste)
- 1 Tbsp1 Tbsp1 Tbsp dried Oregano
- 3 Tbsp3 Tbsp3 Tbsp Lemon Olive Oil, ( I used Zoě Olive Oil)
- 1 tsp1 tsp1 tsp Cayenne Pepper
- 2 Tbsp2 Tbsp2 Tbsp Unsalted Butter, (melted)
- 3 whole3 whole3 whole Lemon, (juiced)
- 4 whole4 whole4 whole Garlic, (cloves)
- 3 Tbsp3 Tbsp3 Tbsp Parsley, (I had fresh in my freezer, you can also use dried)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven at 400F
- In a bowl add your potatoes, lemon juice, lemon-infused olive oil, salt, pepper, oregano, crushed garlic cloves and cayenne pepper, mix well
- Place potatoes in an oven-safe dish
- Roast for 30min
- Remove from oven and add your melted butter on top
- Bake for another 20-30min or until nice and golden brown
- Remove from oven, garnish with parsley, and serve warm
- Enjoy!
Notes
You can also make these ahead of time and reheat them once your guests arrive for a hosting trick! They're great in the air fryer the next day. Serve with dipping sauce of your choice if needed!
