Purple Sweet Potato Bake With French Onion Dip!
Outdoor BBQ season is here! With that comes easy side dishes that you could make ahead like this one. Try my purple sweet potato bake with french onion dip as a twist on the classic loaded baked potato you're used to seeing at any party. 🔥💜
Ingredients
- 2 whole2 whole2 whole Purple Potato, (washed and cut in halves)
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil, (I used Zoë Olive Oil)
- 1 Tbsp1 Tbsp1 Tbsp Salt and Pepper, (to taste)
- 1 whole1 whole1 whole French Onion Seasoning Mix - Primal Palate
- 500 ml500 ml500 ml Sour Cream, ( 1 standard sour cream container)
- 1 cup1 cup1 cup Mexican Cheese Blend, (already grated)
- 2 Tbsp2 Tbsp2 Tbsp Parsley, (I used fresh, you can also use dried)
- 4 tsp4 tsp4 tsp Butter, Unsalted

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Wash and dry your potatoes
- Slice potatoes in halves
- In an oven-safe baking dish, lay your potatoes with the flat side facing down
- Drizzle your olive oil over each potato
- Sprinkle your salt and pepper over each potato
- Bake in oven at 400F for 25min (or until golden brown, flipping half way through the cooking time)
- While potatoes are cooking, open your container of sour cream and place your french onion dip into the container, mix well, set aside in fridge
- Potatoes are ready once a fork can easily be inserted
- Top the potatoes off with your Mexican cheese blend (or cheese of choice)
- Bake at 400F for another 5 minutes or until the cheese starts to bubble on the potaotes
- Remove from the oven-safe dish once cooked and set them on a plate of choice
- Once they've cooled for about 10 minutes, you can then top them with extra salt and pepper, butter, a scoop of french onion mix and fresh parsley for colour
- Dig in while still hot and enjoy!
Notes
You can swap the parsley for green onion or chives. The potaotes can also be pre-baked ahead and heated up just before guests arrive. If you have the time, you can always prepare the french onion mix the night before and leave it in the fridge so it's ready the day of!
