Shrimp and Corn Fritters (GF/DF/Soy Free) (Edit recipe)

When you're gluten free, finding fried items that are safe from cross contamination are hard to come by. One of the foods that I've missed the most were fritters. In this recipe, I've combined fresh shrimp with crisp corn, sweet peppers, and a blend of cajun spices. They are the perfect appetizer, and they pair so well with Trader Joe's Creamy Dill dressing. You're going to want to double up on this recipe, because these fritters will not last long when you make them!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. - add flour to a large mixing bowl.
  2. -mix in eggs and oil.
  3. - add seasonings and baking powder.
  4. - add corn, peppers, onion, and shrimp.
  5. - mix until combined.
  6. - place bowl in the refrigerator for a minimum of 10 minutes.
  7. - place 1/4c of olive oil in a frying pan on medium high heat.
  8. - using a tablespoon, place approximately two tablespoons of batter for each fritter in the hot oil.
  9. - fry on each side for approximately two minutes each (or until golden brown).
  10. - place on a cooling rack and add additional salt (if desired)
  11. - serve on top of lettuce of choice.

Notes

- this recipe pairs excellently with trader joes vegan creamy dill dressing.
