Zesty Beef, Corn and Black Bean Skillet Nachos
Easy weeknight nacho dinner that can all be made in one pan. These zesty beef, corn and black bean nachos are sure to be a crowd pleaser. Layers of corn chips, taco meat, black beans, cheese and corn all topped with a zesty cilantro sauce.
Ingredients
Zesty Cilantro Sauce
- 1 whole1 whole1 whole Garlic, clove
- 1 tsp1 tsp1 tsp Lime Zest, zest of one lime
- 2 Tbsp2 Tbsp2 Tbsp Lime Juice
- 0.25 cup0.25 cup0.25 cup Plain Greek Yogurt
- 1 cup1 cup1 cup Cilantro, packed
- 1 whole1 whole1 whole Jalapeño, seeds removed
- 0.25 tsp0.25 tsp0.25 tsp Smoked Paprika
- 0.25 cup0.25 cup0.25 cup Extra Virgin Olive Oil
- 0.5 tsp0.5 tsp0.5 tsp Sea Salt
- 1 tsp1 tsp1 tsp Honey
Beef Nachos
- 1 lb1 lb1 lb US Wellness Meats Ground Beef (85% Lean)
- 1 whole1 whole1 whole Taco Seasoning - Primal Palate
- 6 oz6 oz6 oz Corn Tortilla Chips
- 3 cup3 cup3 cup Grass-fed Organic Cheddar Cheese
- 0.5 cup0.5 cup0.5 cup Bell Pepper, diced
- 1 cup1 cup1 cup Black Beans, drained and rinsed
- 1 cup1 cup1 cup Corn

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine all of the zesty cilantro sauce ingredients in a blender and blend until smooth.
- Preheat oven to 425
- In a large oven proof skillet (preferably cast iron) cook the ground beef and break into small pieces. Strain the grease from the meat and then add it back to the hot skillet with the packet of taco seasoning and 1/2 cup of water. Let simmer until most of the liquid is gone.
- Remove meat from pan.
- In the same pan add half the amount of corn chips, half the taco meat, cheese, corn, bell pepper and black beans. Then top with 2 tablespoons of the zesty cilantro sauce.
- Layer the rest of the chips, beef, corn, black beans, peppers, 2 tablespoons zesty cilantro sauce and the remaining cheese.
- Bake for 15 minutes or until cheese is melted and nachos are heated through.
- Top with more sauce if desired and serve while warm.
Notes
Feel free to get creative and add your favorite toppings like pickled onions, guacamole and salsa.
