A throwback to my high school days and the local pizza joint we’d all find ourselves at after most athletic events, Godfather’s Pizza! My go-to was the “Taco Pie” - hands down some of the funnest food memories! I’ve been hankering for those flavors so I knew it was time to recreate my version of that pizza. Feel free to use your favorite pizza crust or use the LEGIT PIZZA mix, my SOURDOUGH recipe or even my PALEO PIZZA CRUST! For a fun dip to drizzle on top, try my CREAMY TOMATILLO it's so yummy!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. First up, getting that taco meat made is a must. Add oil to a mid sized pan over medium heat then add ground beef, followed by the onion. Saute until most of the pink color is gone. Add green chilies, stirring well to combine and continue cooking. Sprinkle in spices and cook, stirring occasionally until fragrant. To finish, add lime juice and cilantro, stir well then remove from the heat and set aside.
  2. Prepare your pizza crust as needed so it’s ready for toppings. I cooked mine outside in my Ooni pizza oven, see note below for other options.
  3. The method I use for my Ooni oven is to place the dough on my lightly dusted pizza peel and then give it a good shimmy so I know it will be able to slide off into the oven.
  4. Carefully (don’t press down) spoon beans around the center, then crumble desired amount of taco meat on top. I used about ⅓ of a cup or so, but depending on your crust size you could use more or less. Sprinkle cheese on top then green onions.
  5. Slide pizza into a preheated pizza oven and cook accordingly. In our Ooni, it takes around 90 seconds in total. Since every pizza oven varies in size and temperature, your cook time will vary.
  6. Once the pizza is done, remove to a cutting board and add toppings as desired, slice and serve! Be creative and add your favorites like sour cream, salsa or guacamole.

Notes

OVEN METHOD: You can cook this pizza on a pizza stone in your oven at around 500° - with my SOURDOUGH crust. LEGIT PIZZA: crust can be used in a pizza oven, check out my post for steps for best results. PREPACKAGED CRUST: If you’re using a baking sheet with a store bought crust, follow manufacturer’s directions for baking, both for time involved and preparation. TACO MEAT: use leftover meat for another meal like tacos, nachos or even crisped up to top off some fried eggs with a kiss of lime juice, it’s really so good!
