Brussels Sprout Apple Salad (Edit recipe)

Crisp apples and shaved Brussels sprouts come together with a tangy cranberry dressing in this tasty winter salad. To make this super easy, look for pre-shaved Brussels sprouts at your local store, such a time saver! If you can't find them, you can shave them yourself with a sharp knife or mandolin. Just watch those fingers! The flavors of the tangy cranberries blended up with fresh grapefruit juice pair so well with the elements of the salad. Minimal ingredients with this one, but it's loaded with texture and flavors! For Whole30 enjoyment, simply skip the goat cheese feta and save the option once you hit your food freedom stretch!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add dressing ingredients to a small pan and warm until simmering. Remove from heat and set aside to allow the cranberries to become soft. Once cooled and cranberries are soft, add to a mini food processor (or blender) and pulverize until cranberries are pureed.
  2. Add Brussels sprouts to a large mixing bowl, along with the chopped apples. Pour cooled dressing onto the salad, sprinkle with salt and toss to coat.
  3. Sprinkle in cranberries, parsley and goat cheese (if using) and serve.
  4. Best enjoyed the day of, but can be stored to enjoy the next day.

Notes

There are several dried cranberries that would work well here. We found the "Patience Fruit Company" had a couple choices to pick from. Just be sure to find one that is unsweetened. Don't skip softening them in the warm dressing ingredients, they will not pulverize well without that step!
