Baked oatmeal that tastes like dessert but is packed with protein? Sign me up! I’ve been obsessed with anything s’mores related lately (see my s’mores clusters and brownies) so I just had to make a baked oatmeal version. Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Mix everything together in a large bowl up until the sweet thins (or graham crackers).
  2. Pour into a greased 13x8 casserole dish and top with the graham crackers and chocolate chips.
  3. Bake at 350 for 20-25 min. Let cool for at least 10 min before cutting.
  4. These will firm up as they cool, so it’s ok if they aren’t perfectly set when you take them out.
  5. Cut into 6 large squares to get optimal protein amount.
