Sour Cream Bundt Coffee Cakes (GF)
I think cinnamon is my favorite spice to bake with. I love it any time of year. These are individual Bundt cakes but you can also make it as one larger cake. I’ve made this cake for many years and it never lasts very long. These are fabulous with a cup of coffee (or tea). Enjoy
Ingredients
- 8 oz8 oz8 oz Salted Butter, Room temp
- 1 cup1 cup1 cup Maple Sugar, Or coconut sugar
- 1 cup1 cup1 cup Sour Cream
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 3 whole3 whole3 whole Eggs, Room temp
- 2 cups2 cups2 cups Gluten Free Flour, I used King Arthur measure for measure
- 1.5 tsp1.5 tsp1.5 tsp Baking Powder
- .5 tsp.5 tsp.5 tsp Baking Soda
- .5 tsp.5 tsp.5 tsp Salt
- 3 Tbsp3 Tbsp3 Tbsp Gluten Free Flour
- .25 cup.25 cup.25 cup Light Brown Sugar
- 2 Tbsp2 Tbsp2 Tbsp Salted Butter, Cubed and chiled
- 1 tsp1 tsp1 tsp Ground Cinnamon

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat oven to 350 degrees and oil the bundt pan.
- Add the butter, sugar, sour cream, and vanilla to a bowl and mix with paddle attachment until smooth.
- In a small bowl combine the flour, baking powder, baking soda, and salt and stir to combine.
- Slowly add the 1/3 dry ingredients to the wet while the paddle is on low.
- Add an egg, stir.
- Continue this 1/3 at a time until the flour and eggs are all incorporated. Set aside.
- In a small bowl combine the streusel ingredients and stir. Break up the butter a bit so it is in small pieces.
- Add about 2 tsp of streusel into the bottom of each Bundt well.
- Add about 1/3 cup of batter to each well.
- Top with 1 Tbsp of streusel.
- Layer 1/3 cup of batter into each well and smooth out.
- You want to fill each until almost full.
- Bake for 22-23 minutes, until a toothpick comes out clean, depending on cake pan size.
- Let cool completely before turning out.
Notes
If using a full size Bundt pan it will take 40-45 minutes to cook. You can add chopped nuts if you like to the streusel. Pecans are amazing, but walnuts work very well too.
