Apple Cinnamon Protein Cookies
The most saved recipes of mine are my protein cottage cheese cookies so I went ahead and came up with a new flavor - CINNAMON APPLE.
This high protein dessert is great for a weekly meal prep idea so you always have a protein snack on hand. You will NOT taste cottage cheese (the optional monk fruit sweetener does help in here!) and to really up the flavor factor I suggest using THIS Apple Cider Protein Powder (JOYFUL saves you 10%) but vanilla protein will also work!Ingredients
- 2 cup2 cup2 cup Cottage Cheese, Low-Fat
- 0.25 cup0.25 cup0.25 cup Peanut Butter

- 0.25 cup0.25 cup0.25 cup Applesauce, Unsweetened
- 2 tsp2 tsp2 tsp Vanilla Extract

- 0.5 cup0.5 cup0.5 cup Protein Powder, Spiced Apple Cider - Just Ingredients, or vanilla

- 0.333 cup0.333 cup0.333 cup Coconut Flour, + 2 TBS

- 1 tsp1 tsp1 tsp Cinnamon, Ceylon

- 1 pinch1 pinch1 pinch Real Salt - Redmond

- 1 pinch1 pinch1 pinch Nutmeg, Ground
- 2 Tbsp2 Tbsp2 Tbsp Classic Monkfruit Sweetener (with Erythritol) - Lakanto, optional (or granulated sugar of choice)

- 1 whole1 whole1 whole Apple, Organic, chopped small (about 1 cup total)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix all the wet ingredients together and then add the dry and combine.
- Fold in apple.
- Take a cookie scoop and scoop onto parchment lined baking sheet and shape into cookie form with hands. Slightly flatten. These will not spread and they will be soft.
- Bake at 350 for 20 min. Let sit for at least 15 min before removing from pan. They will firm up as they cool.
