This is my go-to meal when I don’t feel like cooking. It’s super easy and pretty hands off which makes it the perfect option for a lazy girl dinner.

  1. Preheat the oven to 400F.
  2. Add the cauliflower gnocchi to a sheet pan and toss with olive oil. Bake for 15-20 minutes or until crispy.
  3. Meanwhile, cook the peas in a small pot of boiling water for 3-4 minutes and heat up the chicken. Toss the peas in a little olive oil, lemon juice, fresh thyme, and flaky salt.
  4. Divide the cauliflower gnocchi between two bowls and top with the peas, chicken, and stracciatella.
