Summer Gnocchi
This is my go-to meal when I don’t feel like cooking. It’s super easy and pretty hands off which makes it the perfect option for a lazy girl dinner.
Ingredients
- 222 Cauliflower Gnocchi - Trader Joe's, bags
- 1 Tbsp1 Tbsp1 Tbsp Olive Oil

- 1 cup1 cup1 cup Peas, Frozen
- 1/21/21/2 Lemon, juiced

- 1/2 tsp1/2 tsp1/2 tsp Thyme, Fresh

- 0.25 tsp0.25 tsp0.25 tsp Salt, flaky

- 0.25 tsp0.25 tsp0.25 tsp Black Pepper

- 12 oz12 oz12 oz Grilled Balsamic Vinegar and Rosemary Chicken - Trader Joe's
- 8 oz8 oz8 oz Burrata, or Stracciatella

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 400F.
- Add the cauliflower gnocchi to a sheet pan and toss with olive oil. Bake for 15-20 minutes or until crispy.
- Meanwhile, cook the peas in a small pot of boiling water for 3-4 minutes and heat up the chicken. Toss the peas in a little olive oil, lemon juice, fresh thyme, and flaky salt.
- Divide the cauliflower gnocchi between two bowls and top with the peas, chicken, and stracciatella.
