Keto Chinese Steamed Egg Custard
Steamed egg custard is a classic Chinese dessert made in a steamer. It’s one of the simplest egg-based desserts, requiring only a few ingredients. It’s especially comforting when you're unwell, with the option to add fresh ginger juice for numerous benefits: reduces bloating, aids digestion, alleviates inflammation, boosts the immune system, helps combat colds and infections, enhances blood circulation, and supports cardiovascular health. This keto version guarantees perfectly silky steamed eggs every time.
Ingredients
- 1 whole1 whole1 whole Egg
- 1 whole1 whole1 whole Egg Yolk
- 25 grams25 grams25 grams Allulose, to taste, or sweetener of choice
- 10 grams10 grams10 grams Heavy Cream (Whipping Cream)
- 130 grams130 grams130 grams Water
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
Process
- Add water to a steamer pot and set it on low heat.
- In a bowl, add in the egg and egg yolk. Weigh the eggs to determine the amount of liquids needed.
- In a separate bowl or measuring cup, mix heavy cream and water, aiming for double the volume of the eggs.
- Warm the liquid mixture in the microwave for 25-30 seconds until it reaches 110°F.
- Stir in the sweetener, vanilla extract, and whisk in the eggs until well combined.
- Strain the mixture through a sieve into a bowl, using a spoon to remove any foam. Cover the bowl with foil.
- Once the water in the steamer pot reaches approximately 210°F, it’s ready for steaming.
- Steam for 12 minutes with the lid on, lifting the lid for 1-2 seconds every 4 minutes to release steam.
- After 12 minutes, check if it’s fully cooked and set. If not, steam for an additional 1-2 minutes. Serve hot.
Notes
The cooking time for the custard will vary based on the bowls used and the temperature. A lower heat will result in a silkier texture. For a creamier texture, increase the heavy cream by an additional 5g to 10g. To experience the benefits of ginger juice, add 1 Tbsp of to the recipe. Adjust the liquids accordingly.
