Thumbprint cookies are a holiday classic. My family loves to make thumbprint cookies for christmas. These turtle thumbprint cookies are a festive way to spruce up your basic thumbprint. Made with a vegan caramel, these turtle thumbprints are a fun vegan christmas cookie recipe!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. First, make your caramel so that it can set while you make your cookies.
  2. To do this, add your butter and brown sugar to a sauce pan.
  3. Bring to a soft bowl, take off heat, and add your coconut cream very slowly so as to not burn yourself.
  4. Stir until coconut cream is evenly distributed and add your vanilla and salt.
  5. Let set at room temp until your cookies have cooked and cooled.
  6. To make the cookies, just beat together your butter and sugar until creamy. Add the flour and vanilla and beat into thick cookie dough.
  7. Add 2 tbsp size circles to a parchment lined baking sheet, press an indent in with your thumb in the center, and bake at 350 Degrees Fahrenheit for 8-10 minutes (do not overbake!)
  8. Let cool completely then fill each indent with caramel, a pecan, and a melted chocolate drizzle.
