Candied Pecan Trail Mix
I love giving gifts at Christmas especially homemade creations from the kitchen. This recipe is great to spread a little holiday cheer. One batch fills more than twenty 3/4 cup treat bags. Add a festive tag and it's the perfect gift. Soaking the pecans helps with digestion and absorption of the nutrients. The dark chocolate chips and salty pumpkin seeds balance out the tastebuds and add immune boosting zinc and magnesium to support the nervous system. This recipe needs 12-24 to soak and 24 hours to dehydrate but worth the wait!

- 350 grams350 grams350 grams Organic Dried Cranberries
- 225 grams225 grams225 grams Dark Chocolate Chips
- 0.5 cup0.5 cup0.5 cup Coconut Oil
- 0.75 cup0.75 cup0.75 cup Pure Maple Syrup, divided
- 2 Tbsp2 Tbsp2 Tbsp Ground Cinnamon

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place pecans in a jar and cover with water and soak for 12-24 hours.
- Drain and rinse.
- In a large skillet over medium heat, melt coconut oil and 1/2 cup of maple syrup. Add pecans and stir to coat.
- Let simmer, stirring occasionally until most of the oil has been absorbed into the pecans.
- Add the rest of the maple syrup and stir to coat. Sprinkle the cinnamon and stir. Let simmer until the remaining oil and maple syrup has been absorbed into the pecans.
- Place on a food dehydrator and dehydrate for 24hrs at 135F. (Time and temperature may vary depending on your climate)
- Once the pecans have been successfully dehydrated, place in a large bowl and add chocolate chips, pumpkin seeds and dried cranberries. Mix well.
- You can divide into 20 festive gift bags if you plan to give them out or store in an airtight contain if you plan to serve it at your holiday even.
- Enjoy!
Notes
The prep itself doesn't take a lot of time, it's the soaking for 12-24 hours, and the dehydrating that takes the more time. Plan at least 3 days ahead to get this ready in time.
