The addition of brown butter and almonds brings a rich, nutty flavor that’s irresistibly addictive and pairs perfectly with a cup of hot chocolate.  This recipe is sure to delight.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Cut butter into small cubes and add to saucepan. Allow the butter to melt and turn brown in color, the milk solids should be a darker brown. Turn off the heat and set aside to cool.
  2. In a mixing bowl, add the brown butter and sugar. Mix until the it becomes a wet sandy mixture.
  3. Add the eggs one by one, mixing after each. Be sure to scape the sides as you go. The texture should be thick yet flowy.
  4. Add the extracts
  5. In a separate bowl, add flour, salt, baking soda and whisk to make sure they are evenly distributed throughout.
  6. Gradually add the flour mixture to the egg mixture. Scrape sides.
  7. Add the chocolate chips (reserve about 1 oz for garnish) and sliced almonds(reserve 2 TB for garnish).
  8. Refrigerate the cookie dough for 30 minutes or until the dough is firm and manageable to scoop.
  9. Preheat the oven to 350 degrees Fahrenheit.
  10. Line a baking sheet with parchment paper. Using a medium size portioning scoop of choice, form cookies and place onto sheet giving them about 3” distance between each other. Garnish with chocolate chips.
  11. Place cookies in the oven and bake for 7 minutes.
  12. After 7 minutes is up, remove the baking sheet and slam onto a surface layer with a towel.
  13. Return to the oven at 365 degrees and bake for 7 more minutes. When time is up, slam on surface again.
  14. Press in almond garnish into cookies using the back of a spoon.
  15. Return to the oven and bake for 1 minute.
  16. Remove and sprinkle with flaky sea salt and allow to cool on the baking sheet for a few minutes then transfer to a wire rack.
  17. Serve and enjoy, best accompanied with a cup of hot chocolate.
