Sugar-Free Pickled Red Onions
These sugar-free pickled red onions are a fridge staple. They are so easy to make, cheaper, healthier, have a pretty pink color, and of course is the perfect tasty condiment.
Ingredients
- 2 whole2 whole2 whole Red Onion, thinly sliced
- 1 cup1 cup1 cup Apple Cider Vinegar
- 1 tsp1 tsp1 tsp Salt
- 0.25 tsp0.25 tsp0.25 tsp Oregano, Fresh, optional
- 1 sprig1 sprig1 sprig Rosemary, Fresh, optional
- 2 cloves2 cloves2 cloves Garlic, optional
- 0.5 cup0.5 cup0.5 cup Water, to cover

- Blanch onions in boiling water for 1 minute
- Drain and return to pot with vinegar and salt. Add water to cover and simmer for 1 minute
- Pour into glass jar with garlic and herbs if using
- Cool and let sit for a few hours in marinate and get pigmented
- Store in fridge
