Paleo Hamburger Soup
My husband is not a big fan of soup. But, he really loves this one. It is simple but has great flavor and loaded with nutrients. Enjoy
Ingredients
- 1 lb1 lb1 lb Ground Beef, Preferably grass fed
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- .5.5.5 Red Onion, small dice
- 111 Japanese White Sweet Potato, small diced
- 2 pieces2 pieces2 pieces Celery, small dice
- 111 Bell Pepper, any color, small dice
- 222 Carrots, Small dice
- 1 tsp1 tsp1 tsp Sea Salt
- .5 tsp.5 tsp.5 tsp Black Pepper
- 1 tsp1 tsp1 tsp Parsley, Dried
- 15 fl oz15 fl oz15 fl oz Tomato Sauce
- 3 cups3 cups3 cups Beef Broth
- 2 Tbsp2 Tbsp2 Tbsp Yellow Mustard
- 3 pieces3 pieces3 pieces Bacon, cooked and chopped
- 333 Green Onion (Scallion), chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a Dutch oven cook the beef in oil on medium heat until done. Break up as it cooks. This should take 8-10 minutes.
- Add vegetables, salt, pepper, and parsley. Stir and cook for 5 minutes.
- Add tomato sauce, broth, and mustard. Stir and cook for 15 minutes on medium low.
- Check to ensure potatoes and carrots are soft. If not cook for another 5 minutes. Exact time will depend on how large you cut the vegetables.
- Top with bacon and scallions.
Notes
You can also top with graded cheddar cheese if you like to make it more of a cheeseburger flavor.
