Creamy Potato Soup

Ingredients

- 111 Onion, large, diced

- 2 tsp2 tsp2 tsp No. 2 Battuto Mix - Oomph Cooking Blends, heaping (or add in 1 tsp parsley and 1 diced carrot)
- 8 cups8 cups8 cups Chicken Broth
- 2 cups2 cups2 cups Almond Milk, unsweetened
- 1/2 cup1/2 cup1/2 cup Nutritional Yeast
- 1 tsp1 tsp1 tsp Garlic
- 2 tsp2 tsp2 tsp Salt
- 1 tsp1 tsp1 tsp White Pepper, (or black)
- 8 pieces8 pieces8 pieces Bacon, cooked crispy and crumbled
- 1 cup1 cup1 cup Sour Cream Alternative - Kite Hill, (or Whole30 compatible non-dairy sour cream)
- 2 Tbsp2 Tbsp2 Tbsp Chives

- In a large pot melt ghee and add onions, celery root, and Oomph (carrot and parsley if using). Cook till softened.
- Add potatoes and broth and bring to a boil.
- Lower and simmer till potatoes are soft.
- Add almond milk, yeast, salt, pepper and garlic.
- Immersion blend till smooth, simmer 10 minutes.
- Combine sour cream and chives in a bowl.
- Garnish soup with sour cream and bacon.
- Enjoy!
