Batch Overnight Oats with Blueberry Compote
These are so good - I sold them in a coffee shop in Hoboken, NJ! Not only are they super easy to make at home, but they are full of really good ingredients to satisfy you and hold you over through the morning. I even have these for lunch sometimes! I make a batch of these in the beginning of the week (and sometimes double it) so that we have a quick grab- and-go breakfast. The blueberry compote is optional, but a really delicious and fun add-on! I hope you give this a try, and you and your family love it. Let me know what you think!
Ingredients
- 2 cups2 cups2 cups Gluten-Free Rolled Oats
- 3 Tbsp3 Tbsp3 Tbsp Chia Seeds
- 2 Tbsp2 Tbsp2 Tbsp Cinnamon, Ground
- 2 cups2 cups2 cups Milk, of choice
- 0.333 cup0.333 cup0.333 cup Maple Syrup, Pure
- 0.333 cup0.333 cup0.333 cup Creamy Peanut Butter
- 1 pinch1 pinch1 pinch Sea Salt
- 2 cups2 cups2 cups Frozen Blueberries, fresh works too
- 0.25 cup0.25 cup0.25 cup Coconut Sugar
- 3 Tbsp3 Tbsp3 Tbsp Water
- 2 tsp2 tsp2 tsp Lemon Juice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- For the oats: add all ingredients to a large tupperware or container.
- Mix well until fully combined (see NOTE).
- Place in fridge overnight. Give it a good stir before serving!
- For the Compote: add all ingredients to a small sauce pan on medium heat.
- Bring to a simmer, stirring constantly.
- The blueberries will start to burst here, but if they don't, you can pop them with a fork.
- Once compote reaches a creamy consistency, remove from heat.
- Once cooled, store in a container in the fridge.
- Top your oats and enjoy!
Notes
Peanut butter must be a natural and drizzly type of peanut butter. The consistency of Smuckers or Trader Joes (orange label) is my favorite for this. Using a creamy peanut butter like Jif will not mix well. For the overnight oats, you can add protein powder, collagen powder, or 1/2-1c of greek yogurt for added protein. If adding protein powders, I recommend adding an extra 1/4c of milk or liquid to make sure the oats don't get too dry or thick! Serving: I normally use a 1c measuring cup to measure out the oats, and a couple tablespoons of the compote!
