Broccoli & Onion Kugel
This was my first time making Kugel—I've never even eaten one before! I wanted a dairy-free, quiche-like casserole, and this hit the spot.
After exploring various kugel recipes—sweet, savory, with noodles, raisins, veggies, or potatoes—I was drawn to broccoli versions. Most used all-purpose flour, but I wondered if it was really necessary for a low-carb take. So, I combined different ideas and created this version.
It’s pudding-like, a crustless quiche, maybe even a souffle—whatever it is, it’s delicious! Perfect for breakfast, a side dish, or lunch with a salad. Made with fresh broccoli, onions, eggs, and simple seasonings, it’s easy and satisfying.
Ingredients

- 1 whole1 whole1 whole Onion, Small
- 4 whole4 whole4 whole Eggs
- 1 cup1 cup1 cup Mayonnaise
- 0.25 tsp0.25 tsp0.25 tsp Xanthan Gum, optional
- 0.25 tsp0.25 tsp0.25 tsp Salt
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper
- 0.5 tsp0.5 tsp0.5 tsp Red Pepper Flakes

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat an oven to 375 degrees F). Grease an 8x8-inch or 6x9-inch baking dish.
- Heat the butter oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Set aside.
- Beat eggs with mayonnaise, xanthan gum , salt, and pepper in a large bowl. Stir in broccoli and onion. Pour into the prepared baking dish. Sprinkle red pepper flakes on top.
- Bake in the preheated oven until broccoli is tender, about 40-45 minutes.
- How to Blanch Broccoli:
- Wash and cut the broccoli down to the desired size. Try to make all of your florets the same size to ensure they will all cook at the same rate.
- Fill a heavy pot 2/3 of the way full with water and bring to a boil. Add salt to the boiling water.
- Carefully place the cut broccoli into the boiling water. Begin counting blanching time once the water returns to a boil. Cook until the broccoli turns bright green and is crisp-tender, about 4 minutes.
- Remove the broccoli with a slotted spoon or drain the broccoli in a colander. Immediately place the broccoli in the ice bath to stop the cooking process. Once cooled, drain well. Set aside.
Notes
Sometimes I steam the broccoli instead of blanching.
