Buffalo Chicken Lettuce Wraps
Tis the season for seeing a TON of buffalo chicken recipes. I was craving something more light and refreshing and decided to make these super simple lettuce wraps with buffalo sauce, and oh my goodness-it was delicious!
Ingredients
- 1 lb1 lb1 lb Pastured Chicken Tenders - US Wellness Meats, shredded
- 1 whole1 whole1 whole Onion, diced
- 3 cloves3 cloves3 cloves Garlic, minced
- 0.5 cup0.5 cup0.5 cup Dairy-Free Buffalo Sauce - Primal Kitchen
- 2 Tbsp2 Tbsp2 Tbsp Plain Greek Yogurt
- 0.25 cup0.25 cup0.25 cup Dill, Fresh, diced
- 0.5 cup0.5 cup0.5 cup Tomato, Grape, sliced
- 0.5 tsp0.5 tsp0.5 tsp Real Salt - Redmond
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper
- 0.25 cup0.25 cup0.25 cup Green Onion (Scallion), chopped
- 1 head1 head1 head Lettuce, green leaf

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- -Marinade the chicken with the buffalo sauce, yogurt, garlic, dill, salt, and pepper for at least 30 minutes
- -In a skillet over medium heat, add the onion and sauté for 3 minutes
- -Add the chicken and cook for around 7-10 minutes
- -Once cooked through, shred the chicken
- -Add in the tomatoes and dill
- -Add more buffalo sauce if wanted and top with green onion
