Slow Cooker Chicken Soup
This Lebanese-inspired Slow Cooker Chicken Soup recipe is made with lemon juice, cinnamon, spinach and chickpeas. Naturally gluten free and full of flavor.
Ingredients
- 1 lb1 lb1 lb Chicken Breasts, Boneless Skinless
- 8 cups8 cups8 cups Chicken Broth
- 15 oz15 oz15 oz Chickpeas, 1 can, drained and rinsed
- 1 cup1 cup1 cup Carrots, diced
- 1 cup1 cup1 cup Celery, diced
- 111 Onion, medium, diced
- .25 cup.25 cup.25 cup Lemon Juice
- 1 tsp1 tsp1 tsp Salt
- 1 tsp1 tsp1 tsp Cinnamon, Ground
- .5 tsp.5 tsp.5 tsp Black Pepper
- 4 cups4 cups4 cups Spinach
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place everything but the spinach in a slow cooker insert and cook on Low for 8 Hours or High for 4 Hours. Stir in the spinach ten minutes before serving. Check for seasoning and adjust accordingly.
