Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix the flour and salt in a bowl, then create a well. Pour in the water and extra virgin olive oil and mix together until well combined. You can also use the hook attachment of a stand mixer to combine.
- Transfer to a working surface and knead to a smooth and soft dough. Gently press your finger on the dough; if it springs back slowly, it's perfect!
- Form dough to a ball, wrap in cling foil and let chill in the fridge for 1/2 hour.
- Once the dough has been refrigerated, cut into 2 equal portions. (Cut in 4 equal portions if you are using the pasta attachment on the KitchenAid stand mixer).
- Depending on the type of pasta you are making, go ahead and cut/shape as desired. If you do not have any pasta making equipment, you can thinly roll out the dough into a long rectangle and cut into long noodles.
- Place pasta on a lined tray and sprinkle with semolina flour to dry out the pasta and let it set for about 15-20 minutes.
- You can either cook your pasta immediately or store in an airtight container in the freezer for up to 1 month.
Notes
