- Line a baking tray with parchment paper and set aside.
- Take your date and using a knife, cut a straight line vertically along one side of your date, remove the pit, and set on your lined baking tray. Repeat for remaining dates.
- In a small bowl, prepare peanut butter filling by combining the peanut butter and protein powder.
- Use a teaspoon to scoop filling, and fill the inside of your dates. Press the date back together so it closes, and repeat for remaining dates.
- In a small bowl, melt your chocolate and coconut oil in 25-30 increments in the microwave, stirring between each increment until smooth melted.
- Dip your date in the melted chocolate and use a fork to pick up the covered date, tapping off any excess chocolate. Place date back on parchment-lined baking tray and repeat for other dates. Place in the freezer to set for about 20-30 minutes.
