3-ingredient Healthy Samoa Recreation
Confession….ive never actually had a Girl Scout Samoa cookie. But, I’ve been really into shredded coconut lately and have been seeing this recipe and knew I wanted to try!
Trust me, you are going to love this recipe!! It is super quick and simple to make, and is just so tasty
Ingredients
- 10 whole10 whole10 whole Organic Pitted Medjool Dates - Thrive Market
- 1 cup1 cup1 cup Coconut Flakes, Unsweetened
- 0.333 cup0.333 cup0.333 cup Dark Chocolate Gems - Hu

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Soak the dates for 10 minutes in boiling water, then drain
- Add the dates and coconut to a processor and blend
- Shape into rounds and place on a prepared baking sheet, you can shape a circle in the middle if you’d like the classic look
- Place in the freezer for 5 minutes to firm
- Melt chocolate and coconut oil if using
- Take out of the freezer and dip each cookie bottom in chocolate. Drizzle remaining on top
- Freeze until chocolate sets and it’s read
