Sweet Chili Honey Chicken and Noodles (Paleo)
I love the flavors of sweet chili, honey, and coconut aminos…with a hint of garlic and ginger. Yum! Similar to a stir-fry dish but made with noodles this dish is absolutely full of flavor.
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 333 Chicken Breasts, Boneless Skinless, Diced
- .5.5.5 Onion, Diced
- 222 Celery, Diced
- 111 Carrots, Diced
- .5.5.5 Bell Pepper, Any color, diced
- .33.33.33 Cauliflower, Small florets
- 8 oz8 oz8 oz Rice Noodles, I prefer Lotus Foods brand
- .75 cup.75 cup.75 cup Coconut Aminos
- .75 cup.75 cup.75 cup Chicken Broth
- 1 Tbsp1 Tbsp1 Tbsp Honey
- 1 Tbsp1 Tbsp1 Tbsp Sweet Chili Sauce
- .25 tsp.25 tsp.25 tsp Ginger, Ground
- .25 tsp.25 tsp.25 tsp Garlic Powder
- .5 tsp.5 tsp.5 tsp Salt
- 2 tsp2 tsp2 tsp Arrowroot Flour

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large skillet cook the chicken in oil on medium heat for 7-8 minutes. Stir periodically.
- Add the vegetables, stir and cook for 7-8 minutes.
- While that cooks heart up water in a large pot. Prepare noodles per package instructions.
- In a large cup add the coconut aminos, broth, honey, sweet chili, ginger, garlic, and salt. Stir
- Add the arrowroot flour to the liquid and stir to dissolve any lumps.
- Once the noodles are ready the chicken and vegetables should be as well.
- Using a large slotted spoon move the noodles into the skillet, draining water in the process.
- Add the liquid and stir. Let everything heat through for 3-4 minutes.
- The sauce will thicken slightly.
Notes
If you want the sauce thicker, you can use 1 Tbsp of arrowroot flour instead of 2 tsp. If you want it more saucy then add 1/4 cup more of each the coconut aminos and broth. This dish is flexible so feel free to change up the vegetables. Add broccoli, green beans, or peas as well. You can top with scallions to give it a bit of crunch.
