Roasted Tomatoes and Cottage Cheese Sauce
I created this recipe when I was craving pizza, but did not have any of the ingredients; and behold, this high protein, delicious, and EASY sauce that I will have on repeat.
Ingredients
- 0.25 cup0.25 cup0.25 cup Cottage Cheese
- 0.5 cup0.5 cup0.5 cup Tomato, Cherry

- 0.25 tsp0.25 tsp0.25 tsp Garlic Powder

- 0.25 tsp0.25 tsp0.25 tsp Himalayan Pink Salt

- 0.25 tsp0.25 tsp0.25 tsp Paprika

- 1 tsp1 tsp1 tsp Extra Virgin Olive Oil

- 1 bunch1 bunch1 bunch Baby Spinach

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 400 F
- Slice tomatoes in half
- In a small baking dish, add cottage cheese to the center, lay tomatoes around the edges
- Sprinkle the spices on top of the tomatoes and cheese, finally drizzle with olive oil
- Place in the oven and bake for 20 minutes
- Pull it out and give it a stir, than add your spinach right on top and mix it in
- Place back in the oven for 10 minutes, along with your flatbread base if using
- Take the flatbread and the sauce out of the oven and spread it over the flatbread
Notes
This sauce would be amazing as a dip, over pasta, even on a panini! feel free to scale up for a larger batch!
