Machaca con Huevos (Shredded Beef & Eggs)
Machaca con huevos is a quick, low-carb Mexican breakfast made with shredded beef and eggs. As the cozy season of using a crock pot winds down, this recipe is the perfect opportunity to repurpose your pot roast or shredded beef into a delicious morning meal. With only a few key ingredients—this traditional dish, is so quick and easy to make. This recipe is just like the way my mom made it, but please note there are many variations of it. Provecho amigos!
Ingredients
- 2 - 3 cup2 - 3 cup2 - 3 cup Shredded Beef, I used left over chuck roast- see notes for recipe
- .5 whole.5 whole.5 whole Onion, finely diced
- 2 whole2 whole2 whole Roma Tomato, diced
- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Real Salt - Redmond
- 1 tsp1 tsp1 tsp Garlic Powder
- .5 - 1 Tbsp.5 - 1 Tbsp.5 - 1 Tbsp Oregano, Dried
- .5 tsp.5 tsp.5 tsp Avocado Oil
- 6 - 8 whole6 - 8 whole6 - 8 whole Egg
- .5 cup.5 cup.5 cup Queso Fresco, crumbled
- 0.25 cup0.25 cup0.25 cup Cilantro, chopped
- 1 - 2 whole1 - 2 whole1 - 2 whole Jalapeño Pepper, sliced into rounds

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large skillet over medium heat, add a splash of avocado oil. Sauté the diced onions until golden brown.
- Mix in your shredded chuck roast (or shredded beef) and lightly brown.
- Add in your tomatoes, salt, garlic powder, and oregano. Let your tomatoes cook down about 3-4 minutes.
- Reduce heat to medium-low, crack your eggs directly into your skillet over the shredded beef. Gently stir and fold them into the machaca until scrambled and set. Avoid overcooking the meat and eggs, ad the meat will become tough.
- Remove the skillet from the heat and serve immediately.
- Garnish with jalapeños, cilantro, and/or fresh queso fresco. Provecho amigos!
Notes
For the meat, I cooked my chuck roast in an Instapot like I would any pot roast (minus the potatoes). I cooked the beef in bone broth, with onions, carrots, salt, and pepper. Once cooked shredded and cooled before making the machaca. Traditionally, Machaca can also be made with dried, salted shredded beef.
