denver omelet egg muffins
a classic omelet - peppers, onions, ham, & cheese, made into easy meal prepped egg muffins. these are a perfect grab & go breakfast option to have on hand. after making these, I like to place them on a baking sheet, freeze them, then store them in the freezer to pull out at anytime. also, if you haven't invested in good silicon muffin tins, I HIGHLY recommend. they make clean up SOOO easy. my absolute favorite are the trudeau brand!
Ingredients
- 16 - 1816 - 1816 - 18 Eggs
- 1 cup1 cup1 cup Cottage Cheese
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 0.5 tsp0.5 tsp0.5 tsp Onion Powder
- 1 tsp1 tsp1 tsp Salt and Pepper
- 10 oz10 oz10 oz Bell Pepper and Onion Blend, Frozen
- 12 oz12 oz12 oz Deli Ham, diced
- 4 oz4 oz4 oz Cheddar Cheese
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat the oven to 350.
- in a blender, addeggs, cottage cheese, garlic powder, onion powder, salt & pepper; blend until smooth.
- in a skillet, saute peppers & onions.
- add diced ham to skillet & fry until ham is a little crisp.
- add veggies & ham into 24 muffin tins (a silicon muffin tin works best).
- pour equal amount of egg mixture into each cup.
- using a toothpick, mix together each cup so well distributed.
- sprinkle cheese on top.
- bake the egg muffins for 18-22 minutes or until eggs are set.
