Passover Matzo Granola (GF)
Use this Passover granola as a delicious snack or easy breakfast! This granola recipe has a buttery, cinnamon flavor that brings you all the comfort without any grains!
Ingredients
- 4 cup4 cup4 cup Matzo Mix, Gluten-free - Yehuda, gluten-free matzo farfel
- .5 cup.5 cup.5 cup Avocado Oil
- .5 cup.5 cup.5 cup Brown Sugar
- .25 cup.25 cup.25 cup Butter, Unsalted, or margarine
- .5 cup.5 cup.5 cup Water
- .5 cup.5 cup.5 cup Pecans, chopped, or nuts of choice
- 1 tsp1 tsp1 tsp Cinnamon, Ground
- .5 cup.5 cup.5 cup Raisins
- .5 cup.5 cup.5 cup Medjool Dates, chopped
- .75 cup.75 cup.75 cup Coconut Flakes, Unsweetened, shredded and unsweetened
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 350℉.
- Line a rimmed baking sheet with parchment or spray with a cooking spray.
- Melt the butter, oil, brown sugar, and water either on the stove or in the microwave in a microwave-safe bowl.
- In a large bowl, combine the gluten-free matzo farfel with the nuts, raisins, dates, coconut, and cinnamon.
- Pour the butter mixture over the matzo and mix until well combined.
- Pour the mixture onto the prepared baking sheet and spread it out.
- Bake for 25 minutes. Stirring occasionally and watching it so it doesn't burn.
- Store in an airtight container on the counter.
Notes
Store on the counter in an airtight container for 5-7 days.
