- Preheat oven to 425°F (218°C).
- Pat tri-tip dry with paper towels. Rub Dijon mustard on both sides. Season generously with salt and pepper.
- Heat cast iron skillet over medium-high heat with olive oil.
- Sear tri-tip on both sides (about 3–4 minutes per side) until browned.
- Transfer skillet to oven and roast for 20–25 minutes, or until the internal temperature reaches: 135°F (57°C) for medium-rare to 140°F (60°C) for medium
- Rest the meat on a cutting board, loosely tented with foil, for 10 minutes before slicing against the grain.
- Top with compound butter just before serving for rich flavor and aroma.
