Colorful Salad with vegetables, turkey and yogurt dressing
This vibrant salad features a colorful array of vegetables and sliced turkey. The base of this healthy dish is a bed of lettuce, topped with bell peppers, cucumbers, cherry tomatoes, carrots and the sliced turkey. The salad is rounded off with the yogurt dressing. People who are intolerant to lactose can use vegan yogurt for the dressing.

- Cut the turkey breast into slices.
- Heat the olive oil in a pan, add the turkey breast, season with paprika powder, garlic powder, salt and pepper and fry over medium heat (175 degrees Celcius/350 degrees Fahrenheit) until cooked through.
- Cut the cucumber into slices, the bell pepper and the carrot into sticks and halve the cherry tomatoes.
- Mix the yogurt with the lemon juice and season with salt and pepper.
- Arrange the lettuce on plates and top with the vegetables, the turkey breast and the yogurt dressing.
