- 14 oz14 oz14 oz Tofu, Firm, cubed
- 3 Tbsp3 Tbsp3 Tbsp Apple Cider Vinegar
- 3 Tbsp3 Tbsp3 Tbsp Olives, brine

- 111 Lemon, juiced

- 2 tsp2 tsp2 tsp Salt

- 1 Tbsp1 Tbsp1 Tbsp Italian Seasoning, optional

- Remove as much liquid from the tofu as possible.
- Use a knife to cut the tofu into cubes or break apart using your hands.
- In an airtight container, combine the lemon juice, apple cider vinegar, olive brine, salt, and Italian seasoning (if using).
- Put the tofu cubes or chunks in the container. Cover, shake, and let it marinate in your fridge for at least 30 minutes.
- Serve cold and enjoy as a salad topping or as a side with olives, or however you would normally enjoy feta!
