Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
meatball patties
- preheat oven to 400.
- first add granola to a food processor & blitz a few times into a finer crumble.
- to a bowl, add granola & remaining meatball ingredients.
- using a medium cookie scoop, make mini meatballs (~24) & smash into a flatter patty,
- place meatball patties on a lined baking dish, then bake for 12-15 minutes.
whipped cottage cheese
- add all ingredients to a food processor; mix until fluffy.
stone fruit compote
- follow the recipe for mixed berry compote, swapping the jam & fruits for the stone fruits.
pan-tinis
- in a skillet, reheat mini pancakes by “toasting” for 1-2 minutes on each side.
- on pancake, add whipped cottage cheese, stone fruits, meatball patties, stone fruit compote, & sprinkle with crispy prosciutto, granola, goat cheese, & herbs.
