Mediterranean Power Wrap
There’s something about summer that calls for fresh, easy meals and I’m fully in my wrap girl era. Quick to make, endlessly customizable, and perfect for packing in flavor and protein. This recipe checks all the boxes: creamy babaganoush, lemon pepper shredded tofu (my latest obsession), juicy tomatoes, and briny olives. It’s high-protein, no-fuss, and seriously satisfying. AKA my dream lunch!
Ingredients

- .5 cup.5 cup.5 cup Everything Bagel Babaganoush (click for recipe)
- 0.25 cup0.25 cup0.25 cup Tomato, Cherry

- 1 Tbsp1 Tbsp1 Tbsp Everything Bagel Seasoning

- 2 Tbsp2 Tbsp2 Tbsp Nutritional Yeast

- .25 cup.25 cup.25 cup Kalamata Olives
- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Organic Balsamic Glaze

- .5 cup.5 cup.5 cup Tofu, extra firm
- 1 Tbsp1 Tbsp1 Tbsp Garlic-Infused Olive Oil
- .5 whole.5 whole.5 whole Lemon, juiced

- 1 tsp1 tsp1 tsp Garlic Powder

- 1 tsp1 tsp1 tsp Onion Powder

- 1 pinch1 pinch1 pinch Black Pepper

- .25 tsp.25 tsp.25 tsp Sea Salt

- 1 Tbsp1 Tbsp1 Tbsp Coconut Aminos

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prep the tofu: Use your hands or a box grater to shred the pressed tofu into bite-sized pieces or fine crumbles.
- This gives it that perfect "pulled" texture.
- In a bowl, toss the shredded tofu with olive oil, lemon juice, zest, garlic powder, onion powder, salt, pepper, and coconut aminos (if using).
- Let sit for 10–15 minutes to soak up the flavor.
- Heat a non-stick skillet over medium heat.
- Add the tofu mixture and sauté for 10–12 minutes, stirring occasionally, until golden, crispy on some edges, and fragrant.
- Add more lemon or pepper to taste. Serve hot or store for meal prep!
- Take your wraps and add the babaganoush.
- Layer seasonings and toppings leaving balsamic for last!
- Wrap and enjoy
