Our entire family loves lemon anything! Lemons are so fresh and packed with summer flavor. This dessert is perfect for a sweet treat or snack.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 350 degrees.
  2. Prepare a loaf pan by oiling bottom and sides and line with parchment paper (make sure to leave an inch or so higher than the sides of the pan). Set aside.
  3. In a small bowl combine the flours, baking powder, and salt. Stir and set aside.
  4. In a mixing bowl combine the butter and sugar. Using a paddle attachment mix to combine.
  5. Add the zest, juice, and vanilla blend for 10 seconds.
  6. Then in stages add about 1/4 of the flour mixture and 1 egg and 1/4 of the milk. Blend together.
  7. Repeat and blend until all ingredients are incorporated.
  8. Use a spatula to stir and ensure all flour is mixed in.
  9. Pour into loaf pan and smooth out the top. Bake for 30 minutes.
  10. Turn pan around and bake for another 25+ minutes. Until a toothpick inserted deep into the center comes out clean and dry.
  11. Remove pan and let cool for at least 10 minutes in pan before using the parchment paper to lift out.
  12. Let cool for 30+ minutes before glazing.
  13. For glaze in a small bowl combine the ingredients and stir. If you want it thicker add a tad more sugar, if you want it thinner use more lemon juice or milk.
  14. Use a large spoon to drizzle over top.

Notes

You can use oranges in place of lemons for another version of this cake.
