- 3 Tbsp3 Tbsp3 Tbsp Pickled Onions

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Crispy Chickpeas: Preheat the oven to 180°C and prepare a baking tray with parchment paper. Pat chickpeas dry with a kitchen towel and, spread across the tray, drizzle with olive oil, salt & pepper. Toss together and Roast at 180°C for 25 mins. Tossing half way through.
- Make the Dressing: Whisk everything together until creamy. Taste & adjust. (You can add a little maple syrup or sugar if you prefer a little sweetness).
- Assemble the Bowl: Toss couscous, lettuce, tomato & cucumber. Top with chickpeas, parsley, pickled onions & lemon.
- Drizzle the dressing generously and enjoy!
Notes
Make it yours: Add avocado, roasted veggies, or swap in quinoa or brown rice.
