Couscous Salad (Edit recipe)

This Couscous Salad is not only fresh & light, it is super easy to make too!  Loaded with nutrition and flavor, it will be your new favorite quick salad!  The couscous are so simple to make and you can vary the added veggies too to change it up.  I love the crunch of the cucumber especially.  The red wine vinegar is the key ingredient in my opinion though!  It creates such a fresh tangy flavor for this salad.  It is simple and delicious with only a few ingredients and you can add a protein on top like chicken or chick peas too!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Boil water with 1 tsp olive oil per instructions on box. Add Couscous and remove from heat and cover for 5 minutes. Fluff with a fork when time is complete. Peel English cucumber and quarter. If small cucumber might need to cut two. I used regular cucumber when making the video but I do prefer the English ones for this recipe when available. wash and dice up tomatoes. Chop up scallions. Chop cilantro into tiny pieces. Add everything to couscous bowl and toss. Chill at least 5 minutes and enjoy!

Notes

Can add a protein source like grilled chicken or chickpeas Olives are a good addition.  Kalamata or Black olives. If prefer, you can substitute lemon for red wine vinegar Parsley can be substitute for cilantro red onion can be substitute for green onion.
