Cookie Dough Bark
This cookie dough bark is so good, there’s really nothing else to write here!
Ingredients
Cookie Dough
- 0.5 cup0.5 cup0.5 cup Butter, Unsalted, softened

- 0.25 cup0.25 cup0.25 cup Granulated White Sugar

- 0.25 cup0.25 cup0.25 cup Brown Sugar, lightly packed
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 2 cups2 cups2 cups Almond Flour, Bob's Red Mill Super-Fine

- 0.5 tsp0.5 tsp0.5 tsp Kosher Salt

- 0.5 cup0.5 cup0.5 cup Dark Chocolate Chips

Chocolate Layer
- 7 oz7 oz7 oz Dark Chocolate Chips

- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil
- 1 tsp1 tsp1 tsp Kosher Flake Salt - Primal Palate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl or standing mixer, combine the softened butter, sugars, and vanilla extract until smooth and creamy.
- Gradually add in the almond flour and kosher salt until the dough has formed.
- Gently add in the chocolate chips.
- Pour the dough onto a parchment lined cookie sheet, and use your hands to press it into a large rectangle, about ½” thick.
- In 30 second increments, melt down the additional chocolate in the microwave.
- Fold in the coconut oil and stir until silky smooth.
- Pour the chocolate all over the cookie dough until it’s fully covered.
- Sprinkle with flaky salt (or kosher salt), and chill for at least 30-45 minutes.
- The longer it sets in the fridge, the better. When you’re ready, slice them into squares and serve cold.
Notes
I recommend that when you serve them, you don’t leave them out for too long as they will soften and get too messy.
