Simple Taco Tuesday Casserole
If you are a busy mama like I am, you will love how easy this taco Tuesday casserole is!!
Ingredients
- 1 lb1 lb1 lb Ground Beef

- 111 Zucchini, Large, shredded
- 12 oz12 oz12 oz Cauliflower Rice, Frozen
- 1 cup1 cup1 cup Basmati Rice

- 15 oz15 oz15 oz Black Beans

- 2 cups2 cups2 cups Salsa, I have a recipe on my page for fresh salsa
- 2 - 3 cups2 - 3 cups2 - 3 cups Cheddar Cheese, Shredded

- 111 Corn Tortilla Chips
- 111 Avocado, Sliced
- 111 Cilantro
- 111 Plain Greek Yogurt
- 111 Jalapeño Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine 2 1/4 cups of water, 1 cup of rice, and the bag of cauliflower rice, and cook according to the rice instructions.
- Cook the ground beef and shredded zucchini together until the beef is cooked through.
- Combine everything (except cheese) in a casserole dish and stir until well combined.
- Top with shredded cheese and cover.
- Bake at 375° for 20-25 minutes.
