Ingredients
southwest ancestral meatballs
- 4 oz4 oz4 oz Grass-Fed Beef and Organ Meat Sticks - Lineage Provisions, I used the spicy southwest flavor

- 2 oz2 oz2 oz Traditional Tortilla Chips - Masa, I used the cobanero flavor

- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 2 tsp2 tsp2 tsp Taco Seasoning - Primal Palate

- 1 lb1 lb1 lb Ground Beef

- 0.25 cup0.25 cup0.25 cup Cottage Cheese

southwest ancestral meatballs
- preheat oven to 400.
- add the beef sticks, tortilla chips, monk fruit, & seasoning to a food processor & blitz a few times into a finer crumble.
- to a bowl, add crunchy mixture + remaining meatball ingredients.
- using a small-medium cookie scoop, make mini meatballs.
- place mini meatballs on a lined baking dish, then bake for ~15 minutes.
assembling nacho bites
- make a batch of my espinaca & artichoke protein queso dip (or use any cheesy dip you like!)
- lay out masa tortilla chips, then layer on a dollop of espinaca & artichoke protein queso dip โ southwest ancestral meatball!
