- 1 lb1 lb1 lb Ground Chicken

- 111 Red Onion, Thinly sliced
- 111 Jalapeño Pepper, Membrane removed and diced small
- 2 cups2 cups2 cups Asparagus, Chopped
- 15 oz15 oz15 oz Chickpeas, Heyday coconut curry chickpea can
- 111 Basmati Rice

- 111 Cauliflower Rice

- In a large wok or skillet, crumble up ground chicken, and cook over medium heat
- Once the chicken starts cooking, add jalapeño, onion, and asparagus
- Once chicken is cooked through and veggies are soft, add in the can of coconut curry chickpeas
- Add half a can of water, and stir well
- Simmer for 15-20 mins until it just starts to thicken up
- Serve over basmati rice or cauliflower rice, and top with cilantro
- Enjoy!!
