Low Carb Taco Bites
Looking for a game day appetizer that is light and yummy! These taco bites are so delicious full of flavor and easy to make!
Ingredients
- 8 oz8 oz8 oz Cauliflower Rice, Frozen
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Taco Seasoning - Primal Palate, You can use your favorite brand but

- 1 cup1 cup1 cup Mild Cheddar Cheese, Shredded
- .75 cup.75 cup.75 cup Ground Beef, Cooked with taco seasoning

- 0.25 cup0.25 cup0.25 cup Lettuce, Iceberg, Shredded
- 1 whole1 whole1 whole Roma Tomato, Diced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 1. Preheat your oven to 400 degrees.
- 2. In a mixing bowl add cauliflower rice, cheese and 1 tablespoon of taco seasoning. Mix it well.
- 3. Place spoonfuls of the cauliflower rice mixture into a greased mini muffin pan for bite size pieces. (You can use a regular muffin pan as well the recipe will just make less).
- 4. Place the muffin pans in a preheated oven for 5-7 minutes until everything looks melted.
- 5. Using a shot glass or cup press the mixture down to make it firmer. This helps the cups to stay together better.
- 6. Place your precooked ground beef on top of the cauliflower cups and place back in the oven for 6 minutes.
- 7. Let cool for a few minutes then score the sides of the muffin pans to remove from the muffin pan.
- 8. Top with your favorite taco toppings. I used lettuce and tomatoes.
Notes
This recipe makes 24-30 mini cauliflower bites. feel free to use ground turkey as well!
