Crispy Chik’n Pickle Ranch Salads
Love pickles like I do? You're going to love these easy, hearty, meal sized salads! Tossed with Ranch & Savoury Dill Mustard & topped with crispy chik'n, spicy dills, aged cheddar, and other goodies. Total pickle vibes.
Ingredients

- 2 whole2 whole2 whole Lettuce, Romaine, sliced thinly, washed & dried
- 0.5 whole0.5 whole0.5 whole Red Onion, thinly sliced
- 3 whole3 whole3 whole Green Onion (Scallion), sliced & separated into light & dark portions

- 2 Tbsp2 Tbsp2 Tbsp Chives, chopped + garnish
- 3 Tbsp3 Tbsp3 Tbsp Dill, Fresh, chopped + garnish
- 1 whole1 whole1 whole Black Peppercorns, Ground Fresh, See Recipe

- 1 whole1 whole1 whole Red Pepper Flakes, See Recipe

- 3 tsp3 tsp3 tsp Savoury Dill Pickle Mustard - Gravelbourg
- 1 whole1 whole1 whole Ranch Dressing, See Recipe

- 1 whole1 whole1 whole Grana Padano Cheese, See Recipe
- 2 whole2 whole2 whole Dill Pickle Slices, 2 whole pickles, sliced

- 20 pieces20 pieces20 pieces Aged Cheddar Cheese, Aged white cheddar cut in to approximately 1/2" cubes from the brick

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven according to package directions for crispy bites. You can use them all, or as many as you would like. Lay them on a parchment lined baking sheet and once preheated, bake according to package directions.
- In the meantime, get your romaine, sliced red onions, light portions of your green onions, chives, dill, and cracked pepper / pepper flakes to taste into a large mixing bowl. Once the bites are just about done, add the mustard & as much Ranch as you like for your lettuce. I prefer to keep my lettuce a bit underdressed, but go for whatever you'd like. Toss until creamy and combined & divide between two serving plates.
- Finely shred grana padano over both plates before nestling your chik'n bites around your salads. Arrange some cheddar cubes & sliced pickles next. Finish by garnishing with the dark portions of your green onions, some chives, fresh dill, and some pepper flakes. ENJOY!
Notes
- I had already used the buffalo sauce for another recipe. You can save it for something else. Alternately, you could purchase their chik'n bites instead.
