Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add everything except for the dairy products in a slow cooker. Only use 3/4 cup of chicken broth and reserve 1/4 cup.
  2. Cook on low for 5-6 hours or high for 2-3 hours.
  3. Blend the cottage cheese, cream cheese, and 1/4 cup of chicken broth until smooth.
  4. Add to the crockpot and cook for 30 min.
  5. Stir and adjust seasonings.
  6. Shred the chicken (it should easily fall apart) and stir.
  7. Serve as is or over pasta, veggies, or rice!

Notes

This is purposefully a lightened up version (no heavy cream) but still tastes incredible!
