Crockpot Chicken Carnitas
Your slow cooker is about to be your new BFF! These juicy chicken carnitas are a set-it-and-forget-it meal that’s packed with flavor, tender pulled chicken, and gut-friendly veggies. Perfect for tacos, bowls, or lettuce wraps!
Ingredients
- 2 lb2 lb2 lb Pasture-raised Chicken Breasts - US Wellness Meats
- 1 whole1 whole1 whole Red Onion
- 3 whole3 whole3 whole Bell Pepper, any color
- 4 cloves4 cloves4 cloves Garlic, minced
- .25 cup.25 cup.25 cup Orange Juice, juice of 1 orange
- 2 Tbsp2 Tbsp2 Tbsp Lime Juice
- .5 cup.5 cup.5 cup Chicken Bone Broth
- 1 tsp1 tsp1 tsp Garlic Olive Oil - Kosterina
- 1 tsp1 tsp1 tsp Cumin, Ground
- 1 tsp1 tsp1 tsp Smoked Paprika
- 1 tsp1 tsp1 tsp Oregano, Dried
- .5 tsp.5 tsp.5 tsp Chili Powder
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add sliced red onion and bell peppers to the bottom of your Crockpot. Place chicken on top.
- In a small bowl, mix olive oil, garlic, lime juice, orange juice, broth, and all the spices. Pour over chicken and veggies.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is super tender and easy to shred.
- Shred the chicken in the Crockpot. For crispy edges, transfer shredded chicken to a sheet pan and broil for 5–7 minutes until golden.
- Use in tacos, burrito bowls, salads, or with cauliflower rice! Top with avocado, fresh cilantro, and a squeeze of lime.
