- Combine the blueberries, water, and honey in a small saucepan over medium-high heat.
- Stir to combine and bring to a boil.
- Reduce the heat and let simmer for 25 to 30 minutes, stirring occasionally, until the mixture thickens slightly and the berries break down.
- Remove from heat and stir in the lemon zest.
- Let cool for 5 minutes before serving or storing.
Notes
Frozen blueberries work just as well as fresh ones. For a vegan version, substitute honey with maple syrup or agave. Stores up to 7 days in the fridge or 3 months in the freezer.
