Apple Caramel Cake With Pecans And Caramel Glaze
A moist apple cake baked in a tube pan with chopped pecans, then inverted and drizzled with a buttery caramel glaze. This handed-down family recipe is perfect for the Jewish High Holidays or any fall gathering.
Ingredients
- 3 cups3 cups3 cups All Purpose Flour
- 1 tsp1 tsp1 tsp Baking Soda
- 1 tsp1 tsp1 tsp Kosher Salt

- 1.5 cups1.5 cups1.5 cups Avocado Oil, or sunflower
- 2 cups2 cups2 cups Cane Sugar
- 1 tsp1 tsp1 tsp Vanilla Extract

- 333 Eggs, whole
- 1.25 cups1.25 cups1.25 cups Pecans, chopped

- 2 cups2 cups2 cups Apple, Organic, pared and finely chopped
- .5 cup.5 cup.5 cup Butter, Unsalted

- 2 tsp2 tsp2 tsp Milk, (or plant-based milk)

- .5 cup.5 cup.5 cup Brown Sugar, (packed)

Cake
- Preheat the oven to 325u2109.
- Grease a large tube pan with butter and flour or a non-stick spray.
- In a medium bowl, sift the flour, baking soda, and salt together. Set aside.
- Using the electric mixer, beat the oil, sugar, eggs, and vanilla until well done.
- Gradually add the flour and beat until smooth.
- Fold in the nuts and apples.
- Place in the tube pan and bake for 1 to 1 1/2 hours or until a toothpick inserted into the center comes out clean.
- Place the cake on a wire rack for about 20 minutes.
Glaze
- Combine the butter, sugar, and milk in a small pan on the stove over low heat.
- Stir occasionally to combine.
- Invert the cake onto a serving plate.
- Spoon the glaze over the cake and let the cake continue to cool. Serve.
Notes
Cover the cake and store on the countertop for up to 5 days. You can also place the cake in the refrigerator if preferred. Toasting the pecans are optional but it does help the flavor. Use tart apples like Jonathon or Granny Smith for the best flavor. You can freeze the unglazed cake for up to 2 months.
