Apple Streusel Coffee Cake Gluten-Free
Cozy up with this delicious gluten-free coffee cake perfect for the fall season. It's filled with apples, a crunchy streusel topping, and a simple glaze. You can make it using regular or gluten free flour, the Primal Palate Gluten-Free Flour works really well in this recipe or you can use your favorite.

Streusel Topping
- 8 Tbsp8 Tbsp8 Tbsp Butter, Unsalted

- 1.5 cups1.5 cups1.5 cups Gluten-Free Flour, can sub in regular all-purpose flour

- .5 cup.5 cup.5 cup Light Brown Sugar
- 1 tsp1 tsp1 tsp Cinnamon, Ground

- .25 tsp.25 tsp.25 tsp Kosher Salt

- .25 cup.25 cup.25 cup Walnuts, Chopped Pecans or (Chop into small pieces), Chopped

Coffee Cake
- 2.5 cups2.5 cups2.5 cups Gluten-Free Flour, or all-purpose flour

- 1.25 tsp1.25 tsp1.25 tsp Xanthan Gum, (Only if GF flour does not have it in the mix)
- 1 cup1 cup1 cup Granulated White Sugar

- 1 Tbsp1 Tbsp1 Tbsp Baking Powder

- 1 tsp1 tsp1 tsp Baking Soda
- 1 Tbsp1 Tbsp1 Tbsp Cinnamon, Ground

- .5 tsp.5 tsp.5 tsp Salt

- .5 cup.5 cup.5 cup Canola Oil, Veg or
- 222 Eggs, large
- 1 cup1 cup1 cup Milk, Milk/Dairy-free (I used almond milk)

- 1 Tbsp1 Tbsp1 Tbsp Vanilla Extract

- 2 cups2 cups2 cups Apple, Fuji, peeled, cored, and chopped
- 1 cup1 cup1 cup Powdered Sugar
- 1 tsp1 tsp1 tsp Vanilla Extract

- 1 Tbsp1 Tbsp1 Tbsp Milk, Regular/Dairy-free (I used almond milk)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Pre-heat oven to 350°F. Line a 9-inch square or round baking pan so you can pull the cake out of the pan.
- Heat butter in a small pot on the stove until melted.
- Stir in remaining ingredients, with the exception of the nuts.
- Mix with a fork to combine.
- Stir in the pecans or walnuts until combined.
- Combine all dry ingredients in a large bowl and whisk.
- In a separate bowl combine all wet ingredients and mix well.
- Add the dry ingredients to the wet ingredients and mix again.
- Add in the chopped apples and mix until combined.
- Pour the batter into prepared pan and sprinkle the top with the streusel topping..
- Bake 45-55 in or until toothpick comes out clean.
- If topping starts to get too brown, cover it with foil and continue to bake until done.
- Once cake is cooled make the glaze.
- In a bowl combine powdered sugar and vanilla extract.
- Slowly add milk to reach the desired consistency. You want it thick but pourable so you may not need to use all the milk.
- Drizzle over cooled cake.

Notes
You can make this cake using regular flour, just swap it out where needed. To store the cake, either use a domed cake lid or cover with aluminum foil so the topping stays crisp. It does not need to be refrigerated.
