Cookies & Cream Protein Bars
These Cookies & Cream Protein Bars are sweet, rich in texture, totally vegan, and are the perfect balance of wholesome and indulgent. With white chocolate chips and Oreo cookies in every bite, they taste like dessert while packing over 10 grams of protein each. Keep a batch in the fridge to enjoy all week... if they last that long!
Ingredients
- .75 cup.75 cup.75 cup Cashew Butter, can use almond or peanut butter, but it will affect the flavor

- 0.5 cup0.5 cup0.5 cup Vanilla Protein Powder, I like Ora Organic or Kos, or cookies and cream protein powder (such as Nu Harvest)
- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup
- 0.5 tsp0.5 tsp0.5 tsp Salt

- 2 Tbsp2 Tbsp2 Tbsp Organic Vegan White Baking Chips - Pascha Chocolate Co., I also like Enjoy Life mini white chocolate chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl, combine cashew butter, protein powder, maple syrup, and salt. Mix until a thick dough texture is formed.
- Place cookies into a plastic zipper bag. Use your hands or a rolling pin to crush them into crumbs, leaving some bigger pieces for texture.
- Into the bowl with the protein bar mixture, fold in the crumbled cookies and white chocolate chips until evenly distributed.
- Press the mixture into an 8x4-inch loaf pan lined with parchment paper.
- Place in the fridge for about 2 hours to firm up. Remove from the pan and slice into 6 bars or squares. Enjoy!
Notes
Chocolate sandwich cookies: Go classic with regular Oreos, or for a version made with simpler ingredients, try Back To Nature Classic Creme Sandwich Cookies. For a lower sugar option with a little protein, try Catalina Crunch Chocolate Vanilla Sandwich Cookies or Lenny & Larry's Complete Cremes Chocolate Sandwich Cookies.
