Green Monster Pancakes
These pancakes are so nourishing and your kids will never know! My kids ate these for dinner the other night and loved them! They’re packed with nutrients and will keep them full! Plus, they’re green, making them extra fun!
Ingredients
- 0.5 cup0.5 cup0.5 cup Baby Spinach
- 2 whole2 whole2 whole Eggs
- 0.333 cup0.333 cup0.333 cup Plain Greek Yogurt
- 0.333 cup0.333 cup0.333 cup Pumpkin Seeds

- 0.5 cup0.5 cup0.5 cup Pancake Mix

- 1 Tbsp1 Tbsp1 Tbsp Agave Nectar Syrup, Optional

- In a blender, add your spinach, eggs, Greek yogurt and pumpkin seeds. Blend together until it becomes creamy.
- Pour into a bowl. Add in your pancake mix and agave. Stir together.
- Heat a skillet over medium heat.
- Pour pancake mix and cook until perfect!
- Enjoy!

I used Kodiak cakes protein pancake mix for more protein!
